They've been a winner...but I'm almost done!

With soup!

We've been eating soup a couple of times a week over winter. It's been great, and they've almost always gone down a treat with the kids. But I have almost come to the end of enjoying them. They are just fab for many reasons: quick and easy, get to use up random veges that arrive in the vege box, get to use up bulk of one type of vege, cheap, the kids eat them and it just feels so wholesome and healthy...

Tonight's was predominantly pumpkin but also had kale, onion, leek and white carrot and I added in some rice and quinoa.

We've enjoyed soups of all flavours and colours - generally all vegan: beetroot, lentil and creamy vegetable (with coconut cream), pumpkin, leek and potato, spinach and potato and the random mixed vege type.

You've done us well, but we've had enough lol.

We are EXACTLY the same...mabye because we just had soup for the fourth night in a row (and had it for lunch on Sunday too!)
Tonight we're having a REAL MEAL - roast chicken and veges, and perhaps even a dessert as well.
Bring on the summer salads eh!

Oh, you're naughty, now I'm going to be thinking of roast chicken and veges all day! It's not on the menu till next week after shopping day...

I know where you are at with this post! I am itching to see some signs of springtime! I love soup but you know winter has to be coming to an end when you just can't face another bowl!

So funny to be reading this as I'm just starting to really look forward to eating loads of soup over the next few months. Was just thinking to myself the other how it's one of the few great things I like about winter!
